I am a BIG fan of quick, simple recipes and dinners that are done in no time. Making pasta is a dream because you can simply cook it while you’re having your breakfast, reading a book, changing nappies, mowing garden etc.
TIP – cook pasta as usual but when you put dry pasta in a saucepan and the water starts boiling, switch your hob off – it will cook itself nicely and you are saving a bit of money on your energy bill 😉
Ingredients (3-4 portions)
- 150g or 2cups dry whole wheat pasta
- 1 red bell pepper
- 3 celery sticks
- ½ cucumber
- ½ leek
Cook pasta. In the meantime, chop vegetables. If you have time, you can make a nice dressing that will complement the salad’s ingredients.
Yogurt garlic dressing
- 1small white yogurt (I prefer Yeo Valley Organic)
- 2-4 garlic cloves, minced
- 1tsp vinegar
- ½ tsp honey
- pinch of ground black pepper
Simply mix together.
Combine pasta with chopped vegetables, stir in garlic dressing and serve (cold) with any cheese, fish or meat of your preference, or enjoy on its own!
You can use any vegetables you like, there are no limits! You can also mix it up with raisins, mango, grapes etc. It all depends on your taste and time. I just wanted to share with you one of my salad bases when you are too busy to cook and rushing around to make sure you are still having a homemade dinner!
